Need a chocolatey peanut butter treat to get you through the week? Buckeyes are enough to satisfy just about any sweet tooth!
- 1 1/2 cups creamy peanut butter
- 1/2 cup softened butter
- 1 tsp. vanilla
- 4 cups confectioners sugar
- 6 oz. semi sweet chocolate chips
- 2 Tbsp. shortening
- Like a baking sheet with waxed paper and set aside.
- In a medium bowl, mix peanut butter, butter, vanilla, and sugar with hands to form a smooth stiff dough. Shape into balls using 2 tsp. of dough for each ball. Place on prepared pan and refrigerate.
- Melt shortening and chocolate chips together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth and remove from heat.
- Remove balls from refrigerator and insert a toothpick into a ball and dip into melted chocolate. Return to waxed paper, chocolate side down and remove tooth pick (so the peanut butter side is up)! Repeat with remaining balls.
