When approached by Beacon Ridge to take charge of the country club’s restaurant, Karen Littlefield agreed to a trial period.
Karen Littlefield has headed up Filly & Colts Restaurant at Little River Golf & Resort for years, and she and her husband, John, continue to manage that location as they take on their new location in Seven Lakes West.
“[Beacon Ridge] came to us and asked for help,” Karen said.
Since starting at Beacon Ridge over a month ago, Karen has taken full control of the restaurant and created a limited menu that caters specifically to golfers, maintaining a country club theme. The menu changes every week as it is tailored by Karen.
The restaurant will continue its Sunday brunch from 10:30AM – 2:00PM, providing waffles, omelets, fruit, additional protein, and more.
“We always carve something,” she said.
The restaurant will also be serving a buffet on Tuesdays and dinner on Friday and Saturday nights.
“The first weekend of every month we will serve prime rib,” Karen said.
While at Beacon Ridge, she hopes to source local produce to provide the best quality meals for guests.
Towards the end of the year, if the restaurant does well, Karen and John will establish Filly & Colts at Beacon Ridge.
If this happens, the restaurant will close in January 2019 to update the kitchen, bar, and dining room. The upstairs area will be used for private parties.
So far, the integration of Karen at Beacon Ridge has been well received, according to community feedback.
